Highly citrusy and mineral aroma, notes of grapefruit, subtle tropical fruit and wildflowers enhanced by a strong minerality from the purely granitic soil, with a very subtle smokiness. Extremely fresh and persistent on the palate with vibrant citrus touches that produce a very elegant combination, with a fresh and lasting acidity.

Winemaking:
Grapes harvested manually into small perforated 15 kg boxes, cold fermentation technology in a reducing environment with a controlled temperature of around 16ºC, very gentle crushing and pressing in an inert atmosphere to preserve the full aromatic potential of the grapes. We made a great effort to ensure that all pre-fermentation operations are carried out with the utmost rigor because it is responsible for the intrinsic quality of the future wine. This wine fermented in used French oak barrels and remains there after a short racking on the fine lees with regular stirring (“bâtonnage”) until the final blending is done at the end of spring. Fermentation and aging in French oak with “bâtonnage” until bottling in March, aging for at least 4 months in the bottle.
