Intense citrus aroma, with tropical notes and a mineral character. Aging on fine lees has given it an unusual body, very fresh and with vibrant acidity.
Winemaking:
Hand-harvested into small, perforated 15kg boxes, fermentation using cold technology in a reducing environment with a controlled temperature of around 16ºC. The grapes are pressed without crushing or destemming in an inert atmosphere in order to preserve the full aromatic potential of the grapes. Great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor and are responsible for the intrinsic quality of the future wine. All the wine ferments in stainless steel tanks and remains there after a short racking on fine lees with periodic stirring ("battonage") until the final blend is made at the end of spring. Aging in stainless steel vats with stirring of the fine lees - "batonnage" - until bottling.
