Winemaking:
The harvest took place in September. The grapes were transported to the winery in 22kg boxes.
The grapes were kept in a cold chamber for 12 hours, then destemmed, partially crushed, and gravity-fed to the granite lagar (wine press), where complete alcoholic fermentation with foot treading took place with indigenous yeasts. This was followed by malolactic fermentation in stainless steel vats. Aging was carried out in cement eggs for 12 months. The wine was bottled in June 2023.
Exam Notes:
Deep ruby color, aromas of pomegranate, jam, and honeycomb. A wine with beautiful acidity, highlighting black plum on the palate. Very food-friendly and persistent.
