Side Dishes: Seafood with sauce, elaborate fish dishes, pasta with clams or shrimp, exotic oriental cuisine.
Salmon color. Very expressive aroma, with red fruit enveloped by firm and crisp acidity. Light, yet intense, dry, with plenty of freshness and balance in the long finish.
Winemaking:
Total destemming, very gentle pneumatic pressing, using only the free-run juice. Half fermented in stainless steel at 15ºC, half in new French oak barrels. In both cases, there was stirring of the fine lees after fermentation. Aged for 6 months, 50% partially in new French oak barrels.
