Description
Vinification:
It comes from a vineyard whose production was very low and harvested relatively early, so the high natural acidity would give rise to a wine that could be kept. It was vinified with an open spout and the must was placed in small decanters of 1m³ where it remained between 24 and 36 hours to decant by natural precipitation. At the end of this process, it was fermented in used French oak barrels. It was lightly bâtonnageed and aged in barrels until it was completely clear. Bottled without filtering or paste.
Test results:
A floral and elegant scent, along with a slight smoky. In the mouth it surprises with its intensity, lightness and almost crunchy freshness, resulting in a long and vibrant wine with great aging potential.
