Description
The olive grove has a southeast-facing sun exposure, nestled in granite and rocky terrain.
The olive grove is managed within an integrated protection program, thus maintaining respect for the environment.
However, to further increase our contribution to nature, we are converting 6 hectares of olive grove to biodynamic agriculture.
This variety offers high yields, producing oils rich in polyphenols, protecting them from oxidation after extraction. The olives are of excellent quality; after extraction, the oil is green. Organoleptically, when extracted from green olives, the oil has subtly bitter and spicy profiles. However, if ripe olives are used, the oil will be sweet and smooth.
