Description
The floral aromas reveal themselves in a very delicate and elegant bouquet, with subtle menthol and floral notes. On the palate, it is a structured and firm wine, with taut acidity and saline and mineral notes, which give it a distinct elegance and a very gastronomic character.
Winemaking:
Manual harvesting of only bunches located at the base of mature (woody) canes. The wine was obtained by pressing the whole berries without stems, with long static clarification at low temperatures. Fermentation and aging for 9 months on fine lees, with regular bâtonnage. The wine then aged for 1 year in the bottle.
