This wine reveals an elegant and compact structure that supports layered flavors of lemon, grapefruit, quince, and biscuit. Complexity and an acidic structure with mineral edges. Bâtonnage added a delicate creaminess, and the French oak sustains the length on the palate.
Winemaking:
The finest Chardonnay and Arinto grapes were hand-picked in the cool mornings of the second week of September. Grown in clay soils of steeply sloping vineyards. Gently pressed, the must was fermented in French “Allier” oak barrels for 16 days. This was followed by a “bâtonnage sur lies” process for 120 days.
