The terroir of Quinta dos Carvalhais is imprinted in the aromas, texture, and elegance of this Alfrocheiro. It has floral notes, black and wild fruit, cedar and beeswax, resinous nuances, forest, moss, pine, "sous-bois" (underwood) and a menthol touch. The palate has a firm and defined attack, with great freshness and polished tannins, in an elegant and enveloping body. The wine finishes with a voluminous, delicate, long, persistent, and unforgettable finish.
Winemaking:
Three vinifications were carried out: in the first vat, we filled it with 1/3 crushed grapes, 1/3 whole bunch grapes, and 1/3 crushed grapes. In the second vat, we carried out fermentation at 27ºC with crushed grapes and gentle daily pump-overs. In the third vat, we placed crushed grapes. We began with a pre-fermentation maceration at 10ºC for 5 days, followed by fermentation at 27-30ºC, and finally a post-fermentation maceration at 30ºC for 10 days. From the first and second vats, we had wine undergoing malolactic fermentation in vats (20%) and in stainless steel (80%). From the third vat, all the wine underwent malolactic fermentation in barrels. The barrels used were 225L and 500L, used, French oak. The wine was aged in barrels and vats for 3 years and in bottles for 2 years.
