Vinification:
The vineyards are planted in the traditional douro socals (socals and levels). Hand-harvested grapes come from old vineyards located in the subregions of the upper corpo and Douro. All grapes are deceived and crushed. The fermentation takes place in controlled stainless steel tubs. Several delestage are applied during the long period of maceration. Delestage is a technique of French extraction, which means that the juice is drained from the fermentation bowl leaving the lid behind. The fermented juice is then pumped back on the lid, maximizing contact with the skin. This is a very extractive technique but at the same time maintains the elegance of wine. 20 -month internship in new French oak barrels.
