Rosa da Mata presents a deep ruby color on tasting, reflecting this grape variety's low color production. On the nose, the aroma is floral, reminiscent of the scent of autumn forests – moss and pine needles – with a touch of grape, recalling the harvest and wild berries. On the palate, it is not a simple wine; it possesses a rusticity that gradually evolves with elegance. It is complex, yet interesting, with perfect acidity. Ultimately, it has a somewhat bipolar personality, of opposites that combine in a perfect and long finish. The tannins are velvety and mouthwatering. It smells of the Dão region.
Winemaking:
The grapes are harvested manually in 20kg boxes, and the Alfrocheiro grapes are harvested at dawn to ensure the grapes remain intact and free from oxidation, without skin damage, until crushing in the winery. These grapes are fermented in lagares (traditional stone troughs), without temperature control or mechanical treatments. During maceration, remontage (pumping over) is done using wooden jacks, a tradition that maintains the varietal character of the grape variety.
