Destemming and pressing of whole berries; 12 hours of fermentation: pre-fermentation maceration, static cold clarification for 48 hours, using selected yeasts. Fermentation between 16-18ºC. Aging: The final third fermented in 300-liter French oak barrels of 2nd and 3rd year. Battonage on fine lees for about 9 months.
Citrine yellow in color with green reflections, on the palate it is surprisingly ample, full of volume, concentration and with ample acidity as well, but which results in elegance, freshness and very balanced. Long and persistent finish. By definition, it pairs well with sophisticated cuisine dishes that require freshness; and by contrast, dishes where intensity and richness require balance and acidity, which this wine provides.
