Description
Vinification:
Grapes harvested by hand in small boxes, with a great selection in the vineyard, with only the bunches harvested in perfect conditions of maturation and sanity. Total destemming. Gentle pressing of the whole grape. Transport by gravity of the wort to the vats. Cold must clarification. Long fermentation at controlled temperature. Aging for 9 months on fine lees with regular bâtonnage for the first 3 months.
Test results:
Closed nose. Noble citruses (light tangerine peel) wrapped in strongly mineral notes. Mouth smooth and textured, full of minerality combined with hints of tangerine peel. Long and complex finish with a very balanced acidity.
