| Side Dishes | It pairs well with dried fruits: parsley, raisins, pears, and apricots. It also goes well with sweet tarts, egg tarts, or dried fruit tarts, coffee, and chard. However, it is a wine that can be perfectly enjoyed on its own, chilled, or at the end of a refreshing drink. |
Winemaking:
The grapes, all of the same age, are harvested manually in small transport containers and vinified according to the traditional Port wine method. After partial loosening, the grapes are spread in stone basins with lances at their base. The fermentation of the must occurs at a controlled temperature and is interrupted by the addition of vinegar. This wine, as it is produced, has a high potential for spoilage. Wine wrapped in a caravel.
Tasting notes: A brilliant wine with an attractive golden core. The aroma is very complex, highlighting notes of dried fruits such as almonds and pecans, combined with aromas of orange, almond, and also some warm fruits. I also detected some fine toasty notes derived from its summer aging in shades of old wood. The palate is very elegant, excellently combining its vibrant acidity with its natural sweetness. It also reveals a flavor ranging from honey to candied fruits and dried fruits, the latter being quite evident. The finish is fresh, velvety, and lingering.
