ZOM Superior white wine, with its citrine color, presents a youthful aroma with fresh citrus notes and a subtle smoky touch, adding some complexity to the blend. On the palate, it reveals good structure, mineral notes, with a fresh, balanced, and persistent finish.
Winemaking:
The harvest began in early September. Grapes were transported in 20kg boxes to the winery. The grapes were immediately cooled in a cold room and crushed and destemmed the following day. A short maceration took place in a pneumatic press. The must from the pressing began fermentation in stainless steel vats. After the start of fermentation, a small portion of the batch was transferred to second-year French oak barrels, and the remainder to stainless steel vats at a controlled temperature of 15°C for 5 months, of which 4 months were spent on battonage.
